Sweet Potatoe Pudding

2 eggs beaten separately

1 cup sugar

1 cup of cooked mashed sweet potatoes

1/4 cup butter

1 teaspoon lemon extract or juice of 1/2 lemon

1 teaspoon ground nutmeg or 1 T. cinnamon or both

add enough milk & make thin batter

fold in stiffly beaten egg whites

pour in (hot) pan [with] melted butter

bake – 40 to 50 min at 275° or 300°

sherry wine adds to taste
