1 1/2 cakes dry yeast
1 c. lukewarm water
2 c. milk
2 eggs or 4 yolks
2 1/2 teasp salt
1/2 c. shortening
1/2 c. sugar
10 or more cups flour
Crumble yeast into lukewarm water.
Scald milk – add salt & cool.
Cream fat & sugar together.
Beat eggs & add sugar mixture.
When milk is lukewarm add it to soaked yeast & blend flour.
Add eggs & sugar mixture, knead thoroughly.
Place in greased bowl, cover and let rise over night in moderate temp. (70 degrees).
About 2 hours before rolls are needed – shape a portion of dough as desired – place in greased pan – cover & let rise.
Bake in hot oven.
