Snow Pudding

1 envelope plain gelatine

1 c. cold water

1 c. boiling water

3/4 c. sugar

1/4 c. lemon juice

1/4 t. salt

1 Tbsp. grated lemon rind

2 egg whites

Soak gelatine in cold water 5 min; add boiling water & stir until gelatine is dissolved.

Add 1/2 c. sugar & salt, lemon rind & juice.

Cool until slightly thickened.

Then beat in the egg whites which have been beaten with the remaining 1/4 c. sugar until stiff.

Turn into a cold wet mold & chill.

Serve with custard sauce made with the remaining 2 egg yolks.

Serves 4 or 5.
